Rectory Roquefort Salad Dressing 

Ingredients

Source: Our Daily Bread cookbook,published by the Women of Bruton Parish Church, Williamsburg, Virginia This mild Roquefort dressing is delicious over torn spinach or any combination of mixed salad greens.

  • 1 cup olive oil
  • 2 ounces Roquefort cheese, crumbled
  • 1/3 cup white wine vinegar
  • 1/3 cup lemon juice
  • 2 tablespoons drained capers
  • 2 teaspoons granulated sugar (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper

Procedure

In a small bowl, gradually stir about half of the olive oil into the cheese until combined. Transfer to a screw-top jar. Add remaining oil, white wine vinegar, lemon juice, capers, sugar (if desired), salt, garlic salt, and pepper. Cover tightly and shake well. Chill in the refrigerator for at least 1 an hour to blend flavors. Shake again before serving. Makes about 2 cups.

Honey Mustard Salad  Dressing

I got this recipe from a friend at work. It is a really good dipping sauce... And it's great on a spinach salad with either boiled eggs, cherry tomatoes, and extra bacon or smoked chicken or turkey and fruit-nut trail mix.

Ingredients

  • 4 tablespoon mayonnaise
  • 1 tablespoon mustard, yellow or Creole or whatever
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 1 tablespoon honey
  • 1 tablespoon granulated sugar
  • 1 tablespoon bacon drippings or oil (we use olive or canola)
  • Apple cider vinegar
  • Real bacon bits (optional)

Procedure

Roasted Garlic Salad Dressing

Ingredients

  • 4 large cloves of garlic
  • 1/2 cup low-fat mayonnaise
  • 1/2 cup plain low fat yogurt

  • 2 ripe avocados

Commander's Palace Garlic-Anchovy Salad Dressing

Ingredients

Here is a wonderful salad dressing I received from my buddy Bill in New Orleans. I finally made it earlier this week and decided it was good enough to keep. It is from the Commanders Palace Restaurant.....the famous training grounds of many great chefs.

He is a neighbor of the Brennan's and every now and again they share some of their recipes with him. This is a variation of a Caesar Salad. It looks awful, but please try it as the garlic and anchovies are blended in just the right proportions to "balance" each other..........

  • 2 ounces anchovy fillet
  • 12 cloves garlic, mashed
  • 1 egg
  • 1/4 medium onion, chopped
  • 1/2 cup Parmesan, fresh, grated
  • 1 1/2 teaspoons black pepper, coarsely ground
  • 2 tablespoons red wine vinegar
  • 1/2 cup plus 2 tablespoons olive oil
  • Salt and pepper to taste

Procedure

The anchovy is packaged in small tins. Two ounces is about 12 fillets or 2 tablespoons. Place all except oil in the food processor. Process and add oil slowly while the processor is running.
