Fish/Seafood Chowder

Ingredients

Just got back from southern Maine...the coastal region, and had lots of lobster rolls and chowder. Wonderful place!

  • 1 pound fresh cod or haddock or mixture of fish shrimp (peeled and deveined), scallops, lobster
  • 2 potatoes, peeled and sliced
  • Few chopped celery leaves
  • 1 bay leaf
  • 1 1/4 teaspoons salt
  • 2 whole cloves
  • 1 clove garlic, peeled and crushed
  • 2 small onions, sliced
  • 1/4 cup butter
  • 1/2 teaspoon fresh dill weed
  • 1/8 teaspoon white pepper
  • 1 cup boiling water
  • 1 can skim evaporated milk

Procedure

Put all ingredients except milk into a 2-quart casserole dish. Cover and bake at 375 degrees F for 1 hour. Heat milk to scalding and add to chowder. Stir to break up fish/seafood. Garnish with fresh parsley.

Ingredients

  • 1 1/2 cups diced raw fish of choice
  • 2 cups sliced potatoes
  • 1 cup finely chopped onions
  • 1/4 pound salt pork

Brown Sugar Rub for Fish

Ingredients

  • 1/2 cup kosher (coarse) salt
  • 1/2 cup brown sugar
  • 1 1/2 tablespoons garlic powder
  • 1 1/2 tablespoons onion powder

Procedure

Ingredients

  • 1 pound fish fillets
  • 1 medium green bell pepper, chopped
  • 3 medium onions, chopped
  • 2 cups soft bread crumbs
  • 3/4 teaspoon salt

  • 3 tablespoons shortening

Procedure

  • 20 to 24 ounces Alaskan cod fish fillets  (cut into 3- to 4-ounce pieces)
  • 1/2 cup flour (about) to coat fish

  • 2 eggs, beaten with 2 tablespoons milk
  • 2 cups plain bread crumbs (fresh or dried)
  • 1/4 cup dry cheese (use equal amounts  Parmesan and Romano)

  • 1 teaspoon dried parsley (rub together between fingers before adding)
  • 1/4 teaspoon dried sweet basil (rub together  between fingers before adding)

Procedure

Dip fish fillets into flour to which salt or seasoned salt has been added. Dip in egg mixture. Combine bread crumbs with dry cheese, oregano, parsley, and basil. Roll fish in the mixture, making sure fillets are coated well. If bread crumbs do not stick well to fish, repeat the process.

  • 1 (2 pounds) fresh white fish fillet
  • 1 onion, cut into 1/2 x 1 1/2 inch pieces

Marinade

  • 1/4 cup vegetable oil or light olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, crushed
  • 1 teaspoon oregano, crushed
  • 1 teaspoon fresh dill or 1/2 teaspoon dry
  • 1/2 teaspoon salt
  • Pinch of black pepper

Procedure

Ingredients

  • 4 swordfish steaks (4-ounces each, 1 inch thick)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon grated lemon rind
  • 1 clove garlic, minced
  • Vegetable cooking spray
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon pepper

  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon white pepper

Ingredients

  • 1 tablespoon lemon juice
  • 1 tablespoon instant coffee powder
  • 1/4 cup melted butter or margarine

Orange-Marinated Gulf Fish

Ingredients

  • Juice of 2 oranges, approximately 2/3 cup
  • Zest of 1 orange, minced
  • 6 tablespoons sherry
  • 6 tablespoons peanut or olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon prepared Creole mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 (6 ounces) firm white fish fillets

Procedure

Fire up enough charcoal to form a single layer beneath the fish. Combine all the marinade ingredients in a lidded jar, and shake the jar well. Lay fillets in a single layer in a nonreactive pan. Pour marinade over the fish, and let the fish sit at room temperature for 30 minutes.

Drain fillets, reserving marinade. Bring the marinade to a boil, and then simmer it for several minutes. When the charcoal is covered with gray ash, place the fillets on the grill.   • 1 cup Pepperidge Farm goldfish crackers
  • 1 cup small stick pretzels
  • 1 cup nuts

Ingredients

  • 3/4 cup kosher salt (not iodized or ice-cream salt)
  • 1-quart water
  • 2 1/2 tablespoons granulated sugar
  • 2 tablespoons lemon juice

  • 1 teaspoon garlic powder
  • 1/2 teaspoon seafood seasoning
  • Hickory chips
  • Vegetable cooking spray

Procedure

Dissolve salt in water; stir in sugar and the next 4 ingredients. Cut fish into serving-size pieces, if desired. Submerge fish in salt solution; cover and refrigerate overnight.
