  • 1 orange
  • 1 lemon
  • 1 lime
  • 1 tablespoon soy sauce

Salmon Tamales 



  • 1 medium red onion, finely diced (about 1 1/2 cup)
  • 1 1/2 cups diced raw salmon
  • 2 tablespoons chopped canned chiles
  • 2 tablespoons finely chopped cilantro
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper


  • 1 1/2 cups Masa Harina flour (about 1/2 pound)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup warm water
  • 2 tablespoons corn oil
  • 1 tablespoon light sour cream


To make the filling, sweat onion in a covered non-stick skillet over medium heat just until soft, about 5 minutes. Add a little water if necessary to prevent scorching. Combine onion with all remaining ingredients and mix well. Set aside.

To make tamales, combine all dry ingredients and mix well. Combine water and oil and add to dry ingredients. Blend until smooth. Blend in sour cream and knead as you would bread dough.

Divide dough into 6 (1/3-cup) balls, about 3 ounces each. Press each ball flat between two pieces of wax paper and smooth out into a circle 7 inches in diameter with your fingers.

Remove the piece of wax paper on the top and place 1/3 cup of filling mixture in the center of each circle of dough. Using the bottom sheet of paper, lift and fold one edge of the dough over the top of the filling. Repeat with the another edge of the dough to make a tubular envelope and press firmly to seal the dough tightly around the filling.

Roll each tamale in a corn husk or plastic wrap and twist each end firmly, tying if necessary to prevent leakage. Steam the tamales over rapidly boiling water for 15 minutes. Bake at 375 degrees F for 11 to 13 minutes, until rolls are golden brown.

  • 1/2 pound smoked salmon
  • Juice of 2 limes
  • 10 to 12 scallions, sliced, including green tops

Salmon Casserole 


Dear Recipe Goldmine Friends, I've been doing a lot of cooking these past few days. That coupled with the fact that I took my kids out and played hide-and-seek with them for a couple of hours this afternoon didn't leave me much time or energy to cook anything fancy.

I decided at the last minute to make this casserole as an experiment of sorts. It actually turned out really well. I think you'll really like it too.   • 1 (6 ounces) can of salmon
  • About 2 cups cooked elbow macaroni noodles
  • 1 can cream mushroom soup
  • About 3/4 cup LOW SODIUM chicken broth
  • 1 cup celery, diced
  • 1/2 medium bell pepper, diced
  • 1/2 large onion, minced
  • 5 good sized garlic cloves, minced (I used a garlic press)
  • 1 cup shredded Cheddar cheese (maybe a little less)
  • 2 tablespoons parmesan cheese
  • 1/4 teaspoon dry dill (maybe a bit more)
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt

  • 2 cups mashed potatoes
  • 1 cup hot medium white sauce
  • 1 1/2 cups American or Cheddar cheese, grated

Quick Salmon Casserole 


  • 1 large can of salmon
  • 1 long packet of soda crackers, crushed
  • 1/4 cup (1/2 stick) butter or margarine
  • Milk

  • 2 cups dry stuffing mix (I use Pepperidge Farm Herb Seasoned)
  • 1 large can salmon (or 1/2 pint if you can your own)

  • 1 tablespoon soft margarine
  • 1 1/2 tablespoons all-purpose flour
  • 1 cup 1% milk
  • 3 tablespoons chopped green onion
  • 1 cup flaked, cooked or canned salmon, drained and rinsed
  • 1 cup frozen peas, thawed
  • 1/4 cup grated light old Cheddar-style cheese
Salt and freshly grated pepper, to taste


  • 2 1/2 cups leftover mashed potatoes (made from about 4 medium potatoes)
  • 1 % milk, if necessary
  • 1 egg white, beaten


Preheat oven to 400 degrees F. Melts the margarine over medium heat in a medium saucepan. Stir in the flour and cook, stirring, for about 1 minute. Gradually add milk and continue cooking, stirring constantly, until the sauce is smooth and thickened, 3-4 minutes Stir in green onions, salmon peas, and cheese; mix gently. Season to taste with salt and pepper. Spoon into a 9-inch pie plate.

Check mashed potatoes for spreadability. If too firm, mix in milk a little at a time to lighten unmashed potatoes.   • 1 (16 ounces) can salmon, drained, boned, and flaked
  • 2 cups fresh bread crumbs
  • 1 small onion, finely chopped

  • 2 tablespoons pimiento
  • 3 eggs
  • 1 cup skim milk

  • 1/4 cup pineapple juice
  • 2 tablespoons fresh lemon juice

  • 4 medium potatoes, thinly sliced
